Description

Authentic Mexican Tacos de Lengua made with tender beef tongue, seasoned to perfection, and served in warm tortillas with your favorite toppings. A traditional and flavorful delicacy!

For the Lengua (Beef Tongue):

  • 1 beef tongue (about 23 lbs)
  • 1 onion, peeled and halved
  • 4 garlic cloves
  • 2 bay leaves
  • 1 tbsp salt
  • Water (to cover)

For the Tacos:

  • 1215 corn tortillas
  • Diced onion (for topping)
  • Chopped fresh cilantro (for topping)
  • Lime wedges (for serving)
  • Salsa (optional)

 


Instructions

  1. Prepare the Tongue: Rinse the beef tongue thoroughly under cold water. Place it in a large pot and cover with water.
  2. Cook the Tongue: Add onion, garlic, bay leaves, and salt to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook for 3-4 hours, or until the tongue is tender and the skin easily peels off.
  3. Peel the Tongue: Remove the tongue from the pot and let it cool slightly. Peel off the outer skin and discard it.
  4. Dice the Meat: Chop the tongue into small, bite-sized pieces.
  5. Warm the Tortillas: Heat the corn tortillas on a skillet or grill until soft and pliable.
  6. Assemble the Tacos: Fill each tortilla with diced lengua. Top with onion, cilantro, and your favorite salsa.
  7. Serve: Squeeze fresh lime juice over the tacos and enjoy!

 

Notes

  • For added flavor, sauté the diced tongue in a bit of oil with minced garlic and spices like cumin or chili powder.
  • Use a pressure cooker to reduce the cooking time for the tongue to about 1.5 hours.
