For the Lengua (Beef Tongue):
- 1 beef tongue (about 2–3 lbs)
- 1 onion, peeled and halved
- 4 garlic cloves
- 2 bay leaves
- 1 tbsp salt
- Water (to cover)
For the Tacos:
- 12–15 corn tortillas
- Diced onion (for topping)
- Chopped fresh cilantro (for topping)
- Lime wedges (for serving)
- Salsa (optional)
Instructions
- Prepare the Tongue: Rinse the beef tongue thoroughly under cold water. Place it in a large pot and cover with water.
- Cook the Tongue: Add onion, garlic, bay leaves, and salt to the pot. Bring to a boil, then reduce heat to a simmer. Cover and cook for 3-4 hours, or until the tongue is tender and the skin easily peels off.
- Peel the Tongue: Remove the tongue from the pot and let it cool slightly. Peel off the outer skin and discard it.
- Dice the Meat: Chop the tongue into small, bite-sized pieces.
- Warm the Tortillas: Heat the corn tortillas on a skillet or grill until soft and pliable.
- Assemble the Tacos: Fill each tortilla with diced lengua. Top with onion, cilantro, and your favorite salsa.
- Serve: Squeeze fresh lime juice over the tacos and enjoy!
Notes
- For added flavor, sauté the diced tongue in a bit of oil with minced garlic and spices like cumin or chili powder.
- Use a pressure cooker to reduce the cooking time for the tongue to about 1.5 hours.
- Tacos de lengua pair well with green salsa, red salsa, or avocado slices.
